Chicken Enchiladas:
Cube and brown chicken with your desired spices
In separate pan sauté onion and bell peppers (red,yellow,or green) Add veggies to the chicken.
In separate pan melt a cube of cream cheese then add cream of chicken soup and a cup of sour cream.
Add chicken and veggies to this mix and blend.
Fill flour tortillas with the chicken and veggie mixture and fold.
Cover with your favorite shredded cheese and bake for 15 minutes at 350 degrees.

Cheese Toast:
1 small (mini) loaf of Rye or Pumpernickel Bread
½ Cup Parmesan Cheese (fresh shredded)
2 Cup grated swiss cheese
1 Cup Real bacon bits
1/2 Cup mayonnaise
Mix cheeses, bacon bits, and mayo. Spread on bread, place on cookie sheet and broil for 2-3 min until cheese is melted and bubbly. Serve warm.

Pina Colada Upside Down Cake:
You use a regular yellow cake recipe
Add 1tsp of rum extract and coconut cream pudding
Line the bottom on a bunt pan with cooking spray or oil… layer in pineapple chucks and marchiano cherries
Pour cake mix over top
Bake at 350 for 45 min
Let cool before serving

Garlic Chicken:
Melt 1 stick of butter.
Mix with the juice of one lemon, 4 cloves of chopped garlic and a tube of crumbled Ritz crackers.
Cut up chicken into bite size pieces and mix with coating.
Bake at 350 until done (about 25 minutes)

Cheese Ball:
-Philadelphia Cream Cheese
-Hidden Valley Ranch Salad Dressing (original dry in envelope)
-Pecan chips/pieces, bacon bits, or ground parsley
Place cream cheese in a bowl; mix with dry/powdered salad dressing mix until completely mixes; roll into a ball or log then roll entire ball/log in either pecan pieces (recommended), chill to improve flavor. Remove and allow it to be come room tempura before serving with crackers.
Ham Rolls:
-Whole or half boneless ham sliced for sandwiches
-Jars of Kraft flavored cheese (pineapple, old English, jalapeño, etc.) Suggested or
-Philadelphia flavored cream cheeses
-Leaf lettuce
Cover a serving dish or tray with washed dried leaf lettuce; set aside on another plate or cutting board. Then spread each individual ham slice end to end with cheese and roll into a roll up, cut into 2 or 3 even pieces depending on how large you want them. Place on the lettuce bed in desired design…Cover & chill until ready to serve

4 large eggs
1 cup buttermilk
1 stick butter, melted
1 unbaked 10-inch basic pie crust shell
Easy Chili Cheese Dip- Nita in Ohio
1 can chili (with or w/o beans)
1 lb shredded Pepper Jack Cheese
1 16 oz Sour Cream
Mix all ingredients and microwave til cheese is melted (Approx 2-3 mins)

Sausage Cream Cheese Tomato Dip- Nita in Ohio
1-8 oz pkg Cream Cheese
1 -1 lb roll of Breakfast Sausage (Whatever flavor you prefer I like Sage or Hot)
1- can Rotelle Tomatoes with Chilies Drained Brown The Sausage mix with Cream Cheese and Tomatoes and microwave for 2-3 minutes until Cream chease is saoft and mixture blends well. Again Serve with Tortilla Chips (Or you Favorite)
Little Smokies- from Hilda in Illinois
Ingredients:
1 package of Little
Sausage Smokies
2 packs Bacon
1/2 cup Brown Sugar
Toothpicks
Cut bacon slices in half. Wrap each smokie with bacon and put a toothpick through each to hold the bacon on. Place all bacon wrapped smokies in a baking dish. Sprinkle with brown sugar. Heat for 45 minutes in a 350 degree F oven. Serve on a platter or remove toothpick and put in a crock pot to keep them warm as guests munch along.
Easy Pizza
1 can Store bought Pizza Dough
Spagetti Sauce
Mozzarella Cheese
Pepperoni
Roll out pizza dough, top with spagetti sauce, cheese and pepperoni. Bake on 375 for 15-20 minutes. Enjoy!
(You can also use chicken with pesto sauce, spinach and mozzarella cheese)
Sweet Potato Puree
3 ¼ lbs sweet potato - about 4 (I use Okinawa sweet potatoes for the great purple color)
¾ cup heavy cream (can substitute evaporated milk or even reg milk)
4 Tbl butter
1 tsp salt
½ tsp pepper
1 ½ tsp vanilla extract
4 medium sweet potatoes
3 ½ T butter
½ tsp salt
2 Tbl orange juice
1 Tbl lemon juice
½ tsp cornstarch
¼ tsp ground ginger
1/3 cup apricot preserves
Kia's Easy Left-Over Turkey Casserole
Left-over Turkey
Rice
1-2 pkg frozen Broccoli
4 cups Shredded Cheese
Salt/Pepper
Prepare Rice according to package depending on how much you want. Mix turkey, cooked rice, broccoli, 3 cups cheese, salt/pepper in casserole dish and bake at 350 degrees until cheese melts (about 15 min). Stir and top with remaining cheese until that melts.

INGREDIENTS
Leftover mashed potatoes (heated with nutmeg, and cream/butter to soften if needed)
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
1 1/2 pounds leeks, sliced
2 medium tomatoes - peeled, seeded, and coarsely chopped
Leftover ham, 1 1/2 pounds, thinly sliced
1 egg yolk, lightly beaten
1/4 cup shredded mozzarella cheese (optional)
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Lightly oil a 2 quart casserole dish.
2. Heat the olive oil in a large skillet over medium heat. Cook the onion until translucent. Stir in the leek and cook another minute until the leek is soft, but not brown. Mix in the peeled tomatoes, lower the heat, and simmer five minutes, stirring occasionally until the tomatoes have lost some of their shape. Stir in the leftover ham and season with salt and pepper.
4. Spread half of the leftover mashed potatoes on the bottom of the casserole dish. Pour in the ham and leek sauce and cover with the remaining mashed potatoes. Brush the surface of the mashed potatoes with the beaten egg yolk. Sprinkle on the shredded mozzarella. Bake in the preheated oven for 20 minutes, or until golden brown.
Andrea's Hot Buttered Rum After Dinner Drink
Ingredients:
1 stick of butter
1 cup powdered sugar
Cinnamon sticks and nutmeg to garnish
Use an electric mixer to blend butter and powdered sugar. Use a melon baller to scoop butter mixture into individual portions. Allow to chill for at least two hours
In a coffee mug, pour two shots of spiced rum followed by hot apple cider. Top with two/three butter scoops. Garnish with nutmeg and add cinnamon stick to stir. Enjoy!

2 cups mashed potatoes
1 egg, beaten
1 onion, minced
1/4 tsp. salt
1/8 tsp. white pepper
2-3 Tbsp. olive oil
Mix together mashed potatoes, beaten egg and onion in a medium bowl. Add salt and pepper and stir.
Over medium heat, heat olive oil in a medium size nonstick frying pan. Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 4 inch circles that are 1/2" thick. Cook until bottom is browned and crisp, about 3-4 minutes. Carefully turn the patty over and cook the second side until brown and crisp, 3-4 minutes. Serve with ketchup or salsa.
Mitch's Delicious Dinner Rolls
4 cups all-purpose flour
1/2 cup vegetable oil
1 (.25 ounce) package active dry yeast
1/4 cup warm water
1 pinch white sugar
1/2 cup white sugar
2 eggs
1 cup warm water
1 teaspoon salt
In a large bowl, stir yeast, 1/4 cup warm water, and a pinch of sugar.
In another bowl, beat eggs in 1 cup warm water; add oil and salt. Mix egg mixture into yeast, and add sugar. Gradually add flour. Cover with a damp cloth, and allow to stand at room temperature for 1 hour, then place in the refrigerator and allow to rise overnight. This dough is rather sticky, and will raise to at least twice it's size.
Divide the dough into 4 equal parts. Roll each section out into a circle on a floured board or wax paper. Cut into pizza slice shapes, and roll slices large end to small end. Place on greased flat baking pans, and allow to rise for 2 hours.
Bake at 375 for about 8 minutes.
Lemonade Ice Pie

one can frozen pink lemonade (do not add water!)
one container whipped topping
2 grahm cracker crusts
mix lemonade mix + whipped topping till smooth, pour into crust. Freeze till firm. Top withshaved lemon or ribbon candy for garnish.
Pumpkin Cheesecake

2 pkgs 8oz cream cheese
1/2 cup sugar
1/2 tsp vanilla {I usually use clear vanilla it doesn't change the color of you food}
2 eggs
1/2 cup canned pumpkin
1/2 tsp ground cinnamon
just a pinch of ground cloves and nutmeg or you can use a pumpkin pie spice
1 ready to use graham cracker crust
or if you want to make your crust it 1 pkg graham crackers crushed, 6tbsp margarine 1/4 cup sugar mix sugar and graham crackers together and and margarine bake at 350 until margarine is melted and press it into the pie pan.
Cream the cream cheese and sugar until creamy and add vanilla mix well. Add eggs 1 at a time blend well after each egg. make sure you scrape the sides so it will be creamy. Set aside. In a another bowl mix pumpkin, cinnamon, nutmeg, and cloves. Add @ 1 cup to pumpkin mix mix well. Pour rest of cream cheese into graham cracker crust. Spread to even and then add pumpkin cheese cake to top spread gently to even.
Bake in preheated oven at 350 for 40 minutes or until center is almost set. Refrigerate for 3 hours.
Holiday Tropical Pie

1 bag cocoanut
1 cn crushed pinapple
1 cn sweetened condensed milk
crushed nuts (optional)
2 tbs fresh lemon juice
Add all ingredients together and place in pie shells of choice. This fills 2 large gram cracker pie shells. Chill over night in the fridge.
Mom's Granny Smith Apples
4-6 Green Apples
1-2 cups sugar
Cinnamon
1/2 stick Butter
Cut apples into chunks. Boil for 5-7 minutes. Don't let them get too soft. Drain. Put apples back in pot with butter, sugar, cinnamon to taste. Simmer on low until sugar crystalizes.
Great with breakfast or sweet side dish!
Roasted Pumpkin Seeds
Fresh Pumpkin seeds
Garlic powder
Salt
Nature's seasoning
Cayenne Pepper
Preheat oven 375. Coat cookie sheet with cooking spray. Rinse seeds, place in bowl. Season with garlic powder, salt, nature's seasoning, and cayenne to taste. Bake in oven 15-20 minutes, but stir every 5 minutes or so to keep seeds from burning. Turn off oven, but leave seeds inside until completely dried out. Crack shell and enjoy seed inside.
Kia's Easy Heartache Macaroni and Cheese
1 pkg Penne Pasta (little tubes)
1 pkg 4 cups Shredded Mild Cheddar
1 pkg 4 cups Shredded Jack and Colby Cheese
3 or 4 large eggs
1 cup evaporated milk
Sea Salt
Crushed Black Pepper
Boil Pasta according to directions on the box. Mix cheese in separate boil. Save about 2 cups of cheese mixture for the top. Spray Canola Oil on 13x9 Glass baking dish. Spread pasta on bottom, cover with layer of cheese, layer again with pasta and cheese to top of dish. Make sure your last layer is pasta. Scramble eggs and milk and pour mixture over pasta/cheese. Bake at 425 until cheese is melted about 20-30 minutes. Pull out of oven, add salt and pepper to taste. Stir. Top with remaining cheese and bake until top layer of cheese is melted.

Easy Peanut Butter Fudge

1 cup real stick butter
1 cup peanut butter
1 teaspoon vanilla
1 pound of powered sugar
Microwave butter and peanut butter for two minutes on high. Remove and stir. Microwave on high for two more minutes. Add vanilla and powered sugar. Stir. Pour into a buttered 8x8 inch pan, lined with wax paper. Place a second piece of wax paper on the top of the fudge and refrigerate until cool.
Note: The butter acts as a glaze to hold the wax paper in place
Easy Herb Baked Chicken
Chicken pieces (your preference)
olive oil
oregano
sea salt
--Heat oven 350 Degrees
--Coat chicken in olive oil, oregano, sea salt to taste
--Let set for 10 minutes
Spray cooking dish with canola cooking spray, place chicken in dish, cover w/foil and bake 45 minutes or until done.
Bake extra chicken for left-overs.
Cook w/beans and rice; reheat chicken for alfredo sauce and pasta.

Delicious Herb Roasted Red Potatoes
Ingredients:
8 Red potatoes
1c. Olive Oil
Sea Salt to taste (it's healthier)
Rosemary to taste
--heat oven 425 degrees
--Cut potatoes in chunks; put in medium (8qt) bowl
--coat potatoes in olive oil, sea salt, rosemary
--spread on cookie sheet
--bake until almost tender
--switch to high broil and brown
Great for breakfast with eggs and turkey sausage or bacon!!!

Strawberry Spinach Salad
Salad:
Fresh Spinach Leaves
Fresh Sliced Strawberries
Walnuts
Dressing:
Balsamic Vinegar
Olive Oil
Chopped Garlic Paste
Honey
Spread fresh strawberries on a bed of spinach leaves. Top with walnuts.
For Dressing, mix 1/4 cup olive oil, 1/8 cup balsamic vinegar, honey and garlic paste to taste.
Store dressing in frig up to 5 days
